Cooking with Maeve: 2 Ingredient Healthy Ice Cream Recipe


This recipe is perfect as the weather warms up and you want a healthy ice cream recipe for toddlers that is quick and easy. It doesn't make much mess so your little one can pull up a chair and help out. A great starting point to introduce them to cooking and how foods are made.

Homemade ice cream for toddlers doesn't have to use an ice cream machine, and it doesn't have to be complicated. This is the second year now we have used this recipe and Maeve loves getting involved and helping make it.

I also don't have to be worried about all the added sugars in ice cream bought from the store as this one is packed with natural goodness. It's also a really good weaning recipe as you have control of the flavours and gradually add more tastes to your little ones palette. After all, baby led weaning ideas should be fun!!

The only preparation you need in this toddler recipe is to freeze the bananas for at least 2 hours prior to making.

TIPS FOR COOKING WITH TODDLERS:

- Be prepared for some snacking of the toppings. We are lucky if Maeve doesn't get through them all before it gets to the mixing stage!!
- Let them handle the frozen bananas, a great sensory activity (step 3).
- Let them mix the toppings together, they love watching ingredients combine and talking through the steps (step 4).

General Rules:
- Always have something on hand for them to play with. It will save lots of mess and frustration. E.g. measuring spoons, measuring jugs. 
- I measure my ingredients before hand. I find Maeve enjoys the mixing parts most and gets bored (and therefore destructive) if she isn't getting involved.

INGREDIENTS

ICE CREAM:
- Bananas (1 banana should do 2 portions for your little one)
TOPPING:
The toppings are entirely open to what you and your little ones like.
We generally float between:
Nut butter (look for ones that are 100% nuts, organic and palm oil free).
Maeve enjoys cashew nut, peanut and hazelnut.
- Coconut flakes
- Berries (fresh or frozen)
Mango 
- Dates

METHOD

1. Prepare tray with baking paper
2. Cut bananas into slices, place on tray evenly space apart and wrap cling film over the top tightly. Freeze for at least 2 hours. (I do it overnight so it's ready whenever I am and have banana ice cream ready on tap).
3. If you are using mango/ berries/ dates place into food processor and blend. Put aside in a bowl.
4. Put frozen bananas into food processor / blender and blitz until banana is really creamy. 
5. Mix the creamy frozen banana with your topping and enjoy!! 
6. Enjoy watching your little one devour and knowing they are having a healthy homemade treat.
PS. You can freeze the ice cream once it's made but the consistency is quite hard and not as nice and when the frozen banana has just been blended. Try bulk freezing sliced bananas and storing in an airtight container, with baking paper between layers. Then when you are ready to make, just blend the amount of banana you need and mix in your topping. Too easy!
